You will have the opportunity to taste the unique umami of each type of dashi. Please savor a taste of kombu dashi (prepared three days in advance). Next, experience the umami of the finest dashi by shaving bonito flakes. We take pride in using water from Yoro, Gifu Prefecture.

You'll witness the preparation of dishes such as dashi-maki tamago (rolled omelette with dashi) and miso soup right in front of you across the counter. Engage in lively conversation with the chef as you experience an immersive demonstration.

Itinerary

Suzu-ki in Endoji As a Japanese cuisine restaurant, we express the terroir of Aichi, the Chubu region, and Japan through our staff's vision, offering sake and Japanese wines meticulously selected by our sommelier.
Dashi is a liquid made by soaking or boiling ingredients such as bonito flakes and kombu in water to extract flavorful compounds. It serves as the foundation of Japan's traditional food culture, Washoku. During this experience, you will learn about the various types and characteristics of dashi, which impart umami and aroma to dishes, enhancing the deliciousness of ingredients. You'll also have the opportunity to participate in activities such as shaving bonito flakes and preparing dashi. The dashi you prepare will be served with grilled fish and rice.
