Most don't know that Thai cuisine is highly regional. The hilly North is less green curry and pad Thai and more jungle herbs and barbecued meats. Board our private songtheaw truck and get whisked away to some of the best street eats and markets in the city. We don't want to spoil the surprise, but prepare to drool over ladles of creamy khao soi curry with crispy noodles, chilli jam and pickled greens, spatchcocked chickens sizzling over hot charcoal and served with zingy som tum papaya salads and sticky rice, and lemongrass-stuffed sai oua sausages among more than a dozen tastings you'd struggle to find alone.
